I know that if you are like me you have no idea what to make while you are out on the road going from one place to another and still trying to make really healthy meals. Some of these are and some of these try to be it is all depending on your version of what healthy looks like. I will start with what is something I learned how to make when I was in high school and I still make now.
This recipe is called Mexican Chili Casserole
Things you will need:
1. 1 pound ground beef
2. 1/2 cup chopped onion
3. 1 15 ounce can enchilada sauce
4. 1 8 ounce can tomato sauce
5. 1 can kidney beans drained
6. 3 cups corn chips
7. 1 1/2 cups of cheddar cheese
Directions : brown the ground beef and onions in a fry pan. Transfer to a casserole dish and add rest of ingredients putting aside 1 cup of corn chips and 1/2 cup of cheese. Bake at 375 degrees for 25 to 30 minutes.
Serve with sour cream, cheese and corn chips! Enjoy

The second recipe that I would like to share with you is a one pot dish that you may adjust to your liking.
This is my twist on Chili!
What you will need:
1. 1 pound of ground beef
2. 1 large onion, chopped
3. 1 medium bell pepper { whatever color you would like}
4.1 tsp garlic or as much as you would like if you want more
5. 1 16 ounce can of tomatoes cut up
6. 1 16 ounce can red kidney beans undrained { yes dump all of it in with the beans oil and all}
7.1 15 ounce can tomato sauce
8. 1 tablespoon chili powder { this is where I add more, like a lot more}
9. 1/2 tsp dried basil
10. 1/2 tsp of Worcestershire sauce { I also add more of this}
11. salt for taste
Directions: In large pot brown the ground beef, onion, and garlic. Drain off any fat. Add rest of the ingredients and bring to a boil. Reduce heat and simmer for 30 minutes
Now for a more healthy option. I have several salads for you ladies but just so you all know my husband likes these these as well, so give them a shot!
What you will need:
1. Chick Peas or better known as garbanzo beans 1 15 ounce can
2. 3 tablespoons olive oil
3. 3 tablespoons lemon juice
4. 1 garlic clove
5. 1/2 tsp sea salt
6. 1 1/2 cups cherry tomatoes, halved
7. 1 English cucumber, halved and diced
8. 1/2 cup red onion diced
9. 1 avocado sliced
10. 1/4 cup cilantro, chopped { I leave this out as I don’t like it}
11. 4 ounce feta cheese
Directions:
Combine the ingredients for the dressing in a small bowl: olive oil, lemon juice, sea salt, garlic, and a bit of pepper. Whisk together until combined. Combine the rest of ingredients in a large bowl and coat with dressing to taste.
